Fresh Edible Fungi: Receiving, Storage, and Rotation Guidelines
After fresh products arrive, promptly transfer them to a refrigerated environment with adequate ventilation. Avoid surface condensation and stacking pressure; proper rotation can significantly extend shelf life.

Fresh edible mushrooms have high moisture content, and storage conditions upon arrival directly affect shelf life. We recommend transferring the product to a cold storage environment at 2-5°C as soon as possible after receipt to avoid prolonged exposure to room temperature.
Store with packaging kept breathable to prevent water accumulation on mushroom surfaces. Avoid stacking cartons too high to prevent deformation of lower-layer mushrooms. Store different varieties in separate areas to avoid flavor transfer and cross-contamination.
For inventory management, follow a first-in-first-out (FIFO) approach by arrival batch and control per-order quantities based on sales velocity. For longer storage periods, consider processed forms such as dried products, salted items, or soft-packaged goods in brine or water.
